Magic PB Middles

Found the recipe at all recipes.. Thought it looked yummy.. So I decided to try it..

Ingredients

200 g all-purpose flour
40 g unsweetened cocoa powder
2 g baking soda
4g baking powder
100 g white sugar
110 g packed brown sugar
115 g butter, softened
65 g peanut butter [I used Chunky Peanut Butter]
5 ml vanilla extract
1 egg

::Filling::
90 g confectioners’ sugar
195 g peanut butter [I used Creamy Peanut Butter]


Method

1. Sift together flour, cocoa powder, baking soda and baking powder until well mix.
2. In a bowl mixer, cream butter, white sugar and brown sugar until fluffy. Add vanilla essence and egg. Mix in the dry ingredients to the butter mixture.
3. For Filling: Mix peanut butter with confectioner’s sugar until well blended.
4. The cookie dough should be easy to mould with your fingers. Take 1 tbsp of the cookie dough and flatten it with your fingers. Fill in with 1 tsp of the filling and cover completely. Flatten the dough and place on baking sheets ( remember to place them about 1-2 cm apart )
5. Bake at 180 Degrees for 15-20 minutes.

It was time consuming..But it was worth it, cos the cookies are delish.. especially the ones that are fresh out of the oven.. Mmmm..
